The “cookbook” I use most often is a binder where I keep tear-outs of recipes from magazines and old books. I’ve been making this version of a chicken and peppers recipe for the longest, and since the original recipe has been in the binder for years and years, I have no idea where I got it.
Ingredients: Serves 8 (I usually serve half, and freeze the remaining for another meal.)
- 1/4 cup flour
- 1 teaspoon salt
- 1 teaspoon pepper
- 8 thin boneless, skinless chicken breast cutlets
- EVOO
- 4 bell peppers (red, green), sliced
- 4 cloves garlic, minced
- 1/4 cup + 2 tablespoons red wine vinegar (also used in this recipe)
- 2 cups vegetable broth
- 2 teaspoons cornstarch stirred into 2 tablespoons water
- Combine flour, salt, and pepper on a plate, and dredge chicken cutlets in the mixture. Shake off excess.
- Cook floured chicken in oil until lightly browned on both sides. Remove chicken from pan, and set aside.
- Add a bit more oil to the pan, and cook sliced peppers – stirring frequently – for 3-4 minutes.
- Add minced garlic to peppers, and cook for about 1 minute more.
- Pour in vinegar, stir pepper mixture, and cook for about 2 more minutes.
- Add veggie broth, salt and pepper to taste, and cornstarch mixture to the pan. Bring to a boil.
- Return chicken to the pan, and reduce heat to low.
- Cover and simmer until chicken is cooked through.
I make a version of this too that I love! Served over rice. Delicious.
I usually serve this with brown rice, too! Or creamy mashed potatoes. Thanks for reading!

That looks delicious! I will definitely add this one to my list of recipes to try. In another post, you mentioned that you have always preferred to eat vegetables over meat. I am searching for a good vegetarian cookbook. Do you have any recommendations? Thanks!
Although I definitely eat more veggies than meat, I haven’t found a vegetarian cookbook that I’m in love with yet. Most of the ones I’ve seen so far have very complex recipes, and I usually prefer to keep it simple, quick, and easy! This is a great idea for a post: I’m getting to work, lol. In the meantime, the cookbooks detailed in my Cookbook Love post contain some vegetarian dishes. Thanks for the comment and the post idea 🙂
