When I make roasted chicken breasts, I make as many as my old roasting pan can hold, and then freeze the rest. That way when I feel like eating, but not cooking or going out, I have some options for quick, easy meals at home. Here are three of my favorite sandwiches to make with leftover chicken:

Chicken salad and chicken and rice are two of my faves. I also use the carcass to make chicken broth for soups.
Great ideas! You can freeze roasted chicken carcasses in a Ziploc bag until you get enough to flavor a broth. I’ve only done that once, though, bc I keep forgetting!
