Ingredients: makes about 4 servings (sandwiches, on spinach/arugula salad, or by itself :-))
- 1/4 cup + 1 tablespoon mayo
- 1 tablespoon sour cream
- 1 1/2 teaspoon dijon mustard
- 1/2 teaspoon fresh lemon juice
- 1/2 – 3/4 cup grapes, quartered
- 1/2 cup apples, chopped
- 1 tablespoon pecans, chopped
- 1 tablespoon walnuts, chopped
- 1 1/2 tablespoon celery, finely chopped
- 1 1/2 cupĀ cooked chicken, shredded
- salt/pepper, to taste
- In a bowl, stir together first four ingredients.
- Mix in fruit, nuts, and celery.
- Add chicken, and turn to coat.
- Season with salt and pepper to taste.
