When I first started trying to eat more healthily, I would buy tons of fresh fruits and veggies, and stash them in the fridge. Then, a week or two later, I would find myself throwing out all the mushy, moldy, overripe, and uneaten produce I’d spent good money on the week(s) before. My forehead slapping (D’oh!) moment was realizing that for me, daily healthy eating had to be on quick-easy-grab-and-go status… or I just plain wasn’t going to do it consistently.
Now, I wash, slice, chop, and store most* of my refrigerated fruits and veggies as soon as I bring the groceries in from the market. Healthy options are up front and ready to be tossed into a bowl, smoothie, or to-go container.
*I don’t wash or prep soft fruits, like berries or grapes, in advance because I’ve found that they go bad so much faster when I do, likely because of the small bits of water that gets left on them.
