I love fresh fruit, and although I usually eat it plain or blend it into smoothies, I recently tinkered with this recipe to make a must-add-to-the-rotation fruit salad 🙂

Ingredients: serves 4 – 6

  • 1/2 cup heavy cream
  • 3 – 4 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 3 clementines, peeled, sectioned, and chopped
  • 1 cup fresh pineapple, chopped
  • 1 cup fresh cherries, chopped
  • 1/2 cup pecans, chopped

Recipe: Ambrosia Fruit Salad 2

  • Combine heavy cream, sugar, and vanilla extract in a mixing bowl, and mix with a stand or handheld mixer until thickened (about 5 minutes).
  • Add sour cream, and mix to incorporate.
  • Add fruit and nuts, and stir to combine.
  • Cover and refrigerate for 2-3 hours before serving.
