Reader Request: Summer is the best time for fruit. What are your favorite go-to summer fruit salads?
Thank you for your question!
I love fresh fruit, and although I usually eat it plain or blend it into smoothies, I recently tinkered with this recipe to make a must-add-to-the-rotation fruit salad 🙂
Ingredients: serves 4 – 6
- 1/2 cup heavy cream
- 3 – 4 tablespoons sugar
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 3 clementines, peeled, sectioned, and chopped
- 1 cup fresh pineapple, chopped
- 1 cup fresh cherries, chopped
- 1/2 cup pecans, chopped
- Combine heavy cream, sugar, and vanilla extract in a mixing bowl, and mix with a stand or handheld mixer until thickened (about 5 minutes).
- Add sour cream, and mix to incorporate.
- Add fruit and nuts, and stir to combine.
- Cover and refrigerate for 2-3 hours before serving.
This is an awesome fruit salad

I’ve never made ambrosia before but that looks yum – thanks for the recipe!
You’re welcome! It’s a good recipe for potlucks or get-togethers, too.
