Salmon, Spinach, and Parmesan Omelette
In my book, these two omelettes – each made with 1 egg + 1 egg white – have all the makings of great go-to meals:
- Yummy – Always #1… no matter how good-for-me something is, it’s hard to actually eat it if it’s not tasty.
- Fast and easy to make
- Healthy (see this post for more gluten-free breakfast options)
- Customizable – I can change up the recipe depending upon what I already have on hand… great for using up leftovers!
- Versatile – These can be made as a breakfast, with a side salad for brunch/lunch, and in a smaller version for a late night meal.
Chicken, Avocado, and Parmesan Omelette
Thanks for this! I’m not a fan of avocado (you know me and my texture issues) but I can replace that with spinach. I know what I’ll be making for Sunday morning breakfast!
