This is one of those recipes that looks all “special occasion only,” but it’s actually super simple and not labor intensive at all. Any day can be Chocolate Pots de Creme Day 🙂
Ingredients: makes 4 servings (adaptation of this recipe)
Pots de Creme
- 1 2.5 – 3.5 ounce high quality dark chocolate bar (I used Mast Brothers Brooklyn Blend)
- 1/2 cup heavy cream
- 1/4 cup milk
- 2 egg yolks
- 1/8 cup + 1 tablespoon sugar
- 1/2 teaspoon vanilla extract
Vanilla Whipped Cream
- 1/2 cup heavy cream
- 1 1/2 teaspoons sugar
- 1 teaspoon vanilla extract
- Break chocolate bar into pieces, and place in a small bowl.
- Bring 1/2 cup heavy cream and milk just to a boil, and pour over chocolate.
- Stir to melt chocolate and create a smooth mixture.
- Refrigerate chocolate mixture for 30 minutes.
- Preheat oven to 350.
- In a medium bowl, stir together egg yolks, sugar, and vanilla extract.
- Add chocolate mixture, and stir until blended.
- Place four ramekins in a baking dish.
- Pour chocolate into ramekins.
- Pour in enough hot water to cover the bottom half of each ramekin.
- Bake for 35-40 minutes, or until the pots de creme are completely set in the center.
- Remove from oven, and place each ramekin on a cooling rack.
- Cool to room temperature, and refrigerate for a minimum of one hour.
To make the Vanilla Whipped Cream:
- Add heavy cream, sugar, and vanilla extract to a bowl.
- Mix, using a hand or stand mixer, until cream is thick and fluffy (about 3 minutes).
- Place a dollop of whipped cream in each ramekin, and garnish with fresh strawberries.
